I know that most people have long lists of things to do in the Fall since it IS the best season. However, I barely make time to cook supper so my list is mighty short. At least I know I will most likely do everything on it.
1. Go to Mitchell Farms - There are a lot of fun memories to make at Mitchell Farms. They have a corn maze, pumpkin patch, hay ride, and playground. We didn't get to go last year because I was "great with child."
2. Make apple butter - I have never made apple butter before and don't really even know if I'd like it, but I know I'll love how it smells. I'll probably end up giving it to friends as Fall gifts. Thank you Pinterest!
3. Go to a USM game - Sure, they may not be on a winning streak, but they're still my team. At the end of October there is a night game and in November there is an afternoon game. Need to figure out which one to go to.
4. Make a new soup - I can make a pretty good potato soup and taco soup, but I'd like to try some kind of chowder. The plan is a corn chowder with cornbread and some friends. Hopefully some hot chocolate by a fire will also go along with that night.
5. Go to the fair - I didn't get to go last year due to the same child, but I freaking LOVE the fair. I can spend $40 on food alone. The grilled corn, turkey legs, ice cream, chocolate covered strawberries on a stick (yes, you read the correctly), cotton candy, root beer, etc. make me so happy.
6. Have Peyton's party - My little baby turns ONE on October 11! Hard to believe. We're going to have a nursery rhyme theme and it's going to be really low key and really cute.
7. Read a parenting book - I've never read a parenting book before. I know, terrible. But this fall I plan to read one. Suggestions welcome and appreciated.
So that's what's going on during my Fall. I may add some things later on, but it seems like a good place to start.

Easiest Cookies Ever!
I found this recipe on Pinterest and I actually had all of the ingredients on hand so I decided to make it. All you need is:
1 c. butter, softened
2 c. flour
1/2 c. chocolate chips
1/2 c. powdered sugar
1 tsp. vanilla
**Mine were too thick to start with so they weren't cooked through after 10 minutes. I split them in half and cooked them another 10 minutes. Gooey and delicious!

- Beat the butter until fluffy
- Sift in the powdered sugar
- Stir in the vanilla
- Fold in the flour 1/2 c. at a time*
- Stir in chocolate chips
- Scoop out in 1 inch balls
- Bake 10-14 minutes at 350 degrees**

April Goals Update
Daily:
Read the Bible - This hasn't been as great at January, but I'd say it's my second most successful month so far. I devised a plan to read through the New Testament so now I don't have any excuses about not knowing what to read. It's come in handy recently because we keep having trouble with Kaleb. We decided we needed to revamp our house rules and decisions. We now have 2 rules - based on the Bible. We love God and we love each other. Everything else comes from that.
Thank someone - I've been much more intentional about thanking Eric specifically when he does something. I make sure to let him know how much I appreciate him.
Weekly:
Kaleb time - We've had fun playing outside and going to get ice cream together. We went to the park just the two of us and mowed the yard together.
Exercise - I walked around the track some this month. I wish I was more motivated and consistent with it though. I also did Jillian Michael's workout again. Phew!
Recipes - Well, I managed to get 3 of my 4 goal recipes done. The tomato basil pasta was just so complicated that I skipped it. Crockpot lemon chicken was a success! And it was SO easy. I tweaked the recipe a little bit and I think next time it will be even better. Eric liked it a lot and Kaleb even ate it. Pair it with rice and green beans and it's an actual adult meal.
Of course I tried both desserts. The white chocolate raspberry recipe didn't exactly work out because I couldn't find raspberries anywhere! I improvised and made white chocolate strawberries instead. Pretty tasty. They were better when the chocolate was still warm because once it hardened it was pretty hard. Still good though.
Lastly I made the caramel marshmallow popcorn. It was also really good, but pretty rich. I think next time I make it I'll use twice the popcorn. You almost had to eat it with a spoon!
Monthly:
Date Night - My parents took the boys one weekend so Eric and I got to go out to eat to celebrate him getting this summer internship. Sushi is so much better when you don't have to calm a crying baby or chase a rambunctious three year old.
Read - I read the Duck Dynasty book in a couple of days. Now I've moved on to Anna Karenina. It may take me more than a month to finish that one.
DIY - Goodbye DIY goal!

5k - Done and done! I say it twice because I've done two, obviously. I have to admit they're kind of addictive. They're not so hard you have to train a lot, but they're difficult enough to feel accomplished for finishing it. I want to do another one with Eric in November and maybe jog a good bit of it.

March Goal Update
Daily:
Read the Bible - There were some really good days and some days that weren't so good. Always room for improvement.
Thank someone - Is it bad that I'm three months in and I've already forgotten about this goal? I mean, I thank people, but not for specific things they do.
Weekly:
Kaleb time - I know that Kaleb and I have had some quality time together this month. We've played outside and gone to the park and played inside, but I can't think of any specific times.
Exercise - Welllll except for the 5k, this isn't something I'd like to discuss. (whoops)
Recipes - I didn't try anything new, and I honestly didn't cook much at all this month. I was really bad about this. I think I'm going to go ahead and make out my cooking goals for April. There are 4 full weeks in April so I'm going to make creamy tomato basil pasta, crockpot lemon chicken, white chocolate raspberry bites, and caramel marshmallow popcorn. Two meals and two desserts
Monthly:
Date Night - We had a built in date night this month. Our friends Brian and Christy got married this month in Hattiesburg. I was in the wedding so we went to the rehearsal dinner Friday and spent the night at a hotel. What a luxury! Haha We got to hang out all weekend. It was something that we decided we need to do at least once a month.
Read - I started reading Oliver Twist this month because I love Dickens. But then a bunch of things got in the way and I didn't finish it. It's still on my Nook so it'll probably be my April book. I started another book, The Kill Order, Friday night and finished it Saturday. The book review is on the blog already.
DIY - Yeah, no.
Yearly:
5k - Done! My mom and I did the Color Me Rad 5k in Jakson the 23rd of March. We didn't run it by any means, but we finished it. I'm going this weekend to Atlanta with my mom and sisters to do The Color Run.

February Goal Wrap Up
Daily:
Read the Bible - For the most part, this was a big ol honkin fail. I pretty much only read my Bible on Sundays and a few other nights.
Thank someone - It was not as intentional as I intended it to be.
Weekly:
Kaleb time - We had a few good bonding times such as playing in the yard while Peyton slept and going to Walmart, just the two of us. But the ones he remembers (or so it would seem) are the times when I laid with him after he threw up and the time I set fire to the stove.
Exercise - Ummmm. No good. It rained alot and I was sick some and then there were times when I needed to do things after school. Of course, these are all just excuses for me being lazy. I seriously don't think I walked ONE day this month.
Blog - I did pretty well with this again. I don't blog every day, but I certainly blog more intentionally.
Recipes - I didn't do one each week, but I did make the honey butter pork loin and mini chicken pot pies.
Monthly:
Date Night - We had a date afternoon/evening. Eric had to play for the show choir in Hattiesburg so we decided to make a date of it. Mimi and Pops came to keep the boys and we went to Hattiesburg together. We were going to go to a movie after the show choir deal, but there wasn't really anything good playing. That turned out to be a blessing because we went roller skating instead! So much fun and I laughed a lot at all the people (us included) flailing around trying not to fall.
Read - I finished the final book in the triology and started Oliver Twist. I figure that I love Dickens and I should have read it already.
DIY - I did not DIY. This may be a quarterly goal instead.

5k - Well, I'm officially signed up for the Color Me Rad run in Jackson on March 23 and The Color Run in Atlanta on April 6. Just a few more weeks to get ready and I haven't done ANYTHING! I fear for my feet and legs.
